  • 2 cups peeled and shredded white radishes or Chinese white turnips
  • 1 teaspoon salt

Method

Peel and slice the white radishes and then shred them. Place them in a bowl and sprinkle them with the salt; stir. Cover and macerate the radishes for about 30 minutes to extract some of their water.

Drain off the liquid and add the sauce seasonings; stir to blend well. Cover and chill until cold and crisp. Serve the radishes as a side dish or as a garnish for a platter of assorted cold
