This is a soup that puts leftover poultry and pork to good use. It is beautiful-looking, ideal for entertaining. You create a colorful mound of ingredients with a delicate stock poured around it.

Ingredients

  • 1 large dried Chinese black mushroom (presoaked)
  • 2 ounces transparent noodles (presoaked)
  • 1 cup

Method

Soak the mushroom in hot water for 30 minutes. Rinse, destem, and set aside.

Soak the transparent noodles in cold water for 15 minutes. Drain and simmer them with 1 cup stock and the soy sauce over extremely low heat for 5 minutes. Drain and set them aside.
