This is a simple stir-fried dish of lovely pink velveted shrimp and bright-green asparagus.


  • 1 pound small shrimp, velveted
  • 8 to 10 young stalks asparagus, roll-cut


Velvet the shrimp according to the master recipe. This may be done up to 1 hour in advance—do not refrigerate.

Break off the tough ends of the asparagus. Rinse the stalks thoroughly and roll-cut them into 1-inch pieces, leaving the buds intact.
