A delicate stir-fried dish of dainty ingredients—the pinkish-white shrimp fluffy, the green peas firm, and the red ham very tasty. With nothing to turn watery or limp, this is a good dish for a buffet.


  • 1 pound very small shrimp or TT shrimp

Velveting the shrimp

Rinse, dry, and shell the shrimp (if using frozen TT shrimp, thaw, rinse, and dry thoroughly). Put them in a bowl, season with 1 tablespoon sherry, then add the egg white and cornstarch, and mix well. Add 1
