This lobster is chopped, reassembled, and steamed with seasonings—a delicate dish of succulent meat. The final touch of oil-seared raw scallion shreds gives this lovely-looking dish a beautiful fragrance and shine.
Prepare and chop the lobster. Reassemble it in the form of a whole lobster, shell side down, on a heatproof platter.
Combine the seasonings and stir until the salt is dissolved. Spoon this mixture over the lobster and steam over high heat for 15 minutes. Remove the platter from the steamer, put it on another platter or a trivet, and scatter the shredd
