Preparations
1) Remove the head and tentacles; save for another use. 2) Peel off the purple membrane and slit each squid; 3) remove the cartilage. Rinse well and blot dry. 4) Score the surface with small crisscross patterns; then cut into 2-inch squares. Put these in a mixing bowl and toss with
