Chestnuts combine well with red-cooked meats and poultry. Absorbing the rich sauce and seasonings, they become plump and flavorful while they enrich the meat and sauce with a subtle sweetness. This dish is a rich brown color, the flavor sweet and winy with a hint of star anise. It will serve 4 people as a main course; it should be served with rice, steamed buns, or hot rolls and a light vegetable, such as Stir-fried Bean Sprouts or Chinese Cabbage.
