The drumsticks are briefly marinated and deep-fried, and then fast simmered so that they acquire flavor and color but still retain their firm, neat form. Embellished with silky straw mushrooms and crunchy spring bamboo shoots, they make a lovely presentation, everything glistening under the tasty glaze sauce.
