A Yunnan pot is ingenious, and unique. It resembles a porcelain casserole from the outside, but it contains a central chimney inside that tapers to a point below the well-fitted lid. The ingredients are scattered around the chimney and the pot is then covered and placed inside a steaming pot so that the steam rises through the chimney, hits the lid, and forms into a fine mist that sprays the ingredients until done. Poultry cooked in this pot is a marvel of superb flavor and succulence. Unus
