The young chicken is boiled, chopped into small pieces, marinated, then stir-fried with hot peppers, ginger, and liquid seasonings over high heat until the spicy flavor is cooked into the meat. It’s a fast dish that takes only minutes to cook at mealtime, since the preparations may be done in advance. It is very saucy and goes well with rice.
