This is a lovely dish of succulent chicken, crisp celery, and crunchy walnuts. It is lightly seasoned, so nothing detracts from the sweet nuttiness of the deep-fried walnuts, but its flavor does depend on a good chicken stock—the dish will be on the bland side if the stock is thin, but delicately flavorful if it is rich and well seasoned. It serves 2 to 3 for a main course and, since it does not turn “watery” sitting around, it is ideal for a buffet table.
