Light and simple, this is a delicious dish with a distinctive mushroom flavor.
Velvet the sliced chicken breast (may be done up to 1 hour in advance; do not refrigerate). Rinse and drain the sliced bamboo shoots. Wipe the mushrooms with a damp paper towel; dry and slice them.
Heat a wok or large, heavy skillet over high heat until hot; add
