Dark, gleaming, and coarse-looking, this is a flavorful dish full of lingering good tastes. Splashed in as a final touch, the vinegar sizzles to a fine mist that perfumes the chicken without making it sour. Once the chicken is boned and marinated, it takes only 7 minutes to cook. All meat and highly seasoned, it should be served with rice and a delicate and cool-looking vegetable, two of the best ones for it being Stir-fried Celery Cabbage and Stir-fried Shredded Cabbage with Carrots.
