Weighing a little over 1 pound each, fresh (not frozen) Cornish hens are excellent poultry. Ever since they came onto the market, I have substituted them for the costly squab with great success. Here they are seared and then simmered with seasonings and fresh lemon juice until succulent and aromatic.
