Coated with sauce and rich in color, the dainty pieces of meat and vegetables are tasty and subtly hot. This dish is moist and thick, and goes extremely well with rice and a stir-fried cabbage.

  • ½ pound lean pork, loin or butt, diced

Put the diced pork in a bowl and add the soy sauce and sherry; mix well. Sprinkle in the cornstarch and stir; then add the oil and toss and mix until the meat is evenly coated. Refrigerate for 30 minutes. Prepare the garlic, green pepper, bamboo shoots, scallion, and ginger and place them on your working platter. Mix the sauce ingredients in a bowl. All these preparations
