Pork kidneys are really delicious when they are put first under running water and then soaked in cold water with shallots. This treatment eliminates their mealiness and strong odor. This excellent recipe uses pork kidneys for a cold saladlike dish, perfect for a buffet. It has wonderful textures—firm kidneys, crunchy mo-er mushrooms, and crisp cucumbers—and a heavenly taste. It is rich and should be enjoyed only in small portions.
