The bamboo shoots are dry and crunchy, and they have that concentrated savory taste of the dried shrimp. They go well with rich meat dishes such as the Red-Cooked Ham or Duck.


  • 2 tablespoons dried shrimp (presoaked)
  • 4 cups sliced bamboo shoots

Soak the shrimp in 5 tablespoons boiling water for 1 hour. Mince, reserve liquid. The bamboo shoots should be in slices about inch thick and 2
