Cabbage is hearty by nature, but here, cut into thin, long shreds and salted before stir-frying, it acquires a refined look as well as a refreshing lightness. Brightened by slivers of orange carrots, it is dainty and delicate, an excellent balancer for hot and spicy meats. It is delicious hot or cold and it may be served as a vegetable dish or a salad.
