Cucumbers Simmered with Dried Shrimp

While the texture of huge cucumbers is too coarse for cold-stirring or fast stir-frying, it adapts beautifully when simmered. These cucumbers, seasoned with the tasty sea flavor of dried shrimp, are plump and translucent.


  • 1 heaping tablespoon dried shrimp
  • 3 huge cucumbers
  • 2 tablespoons


Cover the shrimp with 5 tablespoons boiling water and soak for 1 hour. Remove them to a dish, leaving the liquid in the bowl.
