Even though winter melon is used primarily for soups, it makes a lovely “vegetable” by itself. Here, with Smithfield ham slices inserted into it and the melon then steamed, it becomes a delicate and elegant dish. Well saturated with the thick sauce, it literally melts in your mouth. The scallions and black pepper are crucial, giving the delicate dish a nice lift.
