Macerating and then briefly searing white radishes lighten their texture, making them crunchy when chilled.


  • 1 pound white radishes, shredded
  • 1 tablespoon salt
  • 2 ta


Wash and dry the radishes and trim off the ends. Slice them thin; then shred the slices. Toss them in a bowl with 1 tablespoon salt until they become moist. Let them macerate in the refrigerator for 2 to 3 hours. Squeeze dry and discard the liquid just before the stir-frying
