If the vegetables have been in the brine about 2 weeks, and are slightly sour, rinse them briefly and shake dry; add 1 or teaspoons of sugar when you stir-fry them. Crisp and crunchy, these pickled vegetables are remarkably refreshing. They are subtly hot and spicy.
