This simple, delicious dish is good either hot or cold.
Heat a wok or a large, heavy skillet over high heat until hot; add the oil, swirl, and heat for 30 seconds. Add the beans and stir rapidly for 10 seconds to sear the skin-shells. Add the salt, sugar, and water, stir to mingle, and when the liquid boils, turn the heat to medium low to maintain a strong simmering. Cover and simmer for 25 minutes, until there is barely any water left in the pan.</
