The mellow flavor of the red-cooking ingredients permeates the soft gluten. This red-cooked dish is also excellent cold.


  • 24 pieces boiled gluten
  • ½ cup sliced bamboo shoots

Drain the boiled gluten. Rinse and drain the sliced bamboo shoots. Pour 1 cup hot water over the mushrooms and soak for 1 hour. Squeeze them over the soaking bowl and reserve the liquid. Rinse the mushrooms briefly, squeeze dry, and destem. Cut the caps into ½
