This cold bean-stick dish is one of the most delicious Chinese vegetarian “meats.” Softened bean sticks are stir-fried, then pressed into a tight roll, steamed, and then chilled so they become as firm and smooth as the breast meat of chicken. Serves 2 as a main dish, more as an appetizer. Stir-fried Asparagus would be lovely with it.

  • ½ pound soybean sticks
  • 1 tablespoon baking soda

Method

Preparations

Bean sticks are sold in 1-pound packages. Take half and break them into several sections. Place them in a large bowl, sprinkle the soda over them, and cover with 8 cups hot water.
