Rich and tasty, this is a well-known “small-eats” specialty from Szechuan province. The beef, of course, is a legitimate main dish, so you could serve it alone one night and use the leftovers for a noodle snack. In fact, all leftover red-cooked and braised meats and poultry are excellent with noodles, whether there is still some meat or just the lovely sauce.
