Served with an array of crisp raw vegetables, this is a typical one-dish northern noodle meal. Although it involves the preparation of three separate components—the noodles, garnishes, and meat sauce—each can be done in advance.

Method

Noodles

Cook fresh noodles or spaghetti or linguine according to the instructions. Rinse, drain, and set aside. When ready to serve, plunge them into a pot of boiling water to boil briefly till hot. Drain them well.
