Filling and satisfying, meat-filled buns are popular snacks all over China. Children look forward to them at home after school and wayfarers seek them out from food vendors and alley eating places. Wholesome, untouched by fancy, they are rib-sticking and scrumptious. They keep well and reheat easily. They are wonderful to take along on a picnic since they may be “steamed” wrapped in foil on a grill or lightly toasted over a low charcoal flame.
