These lovely steamed pears are good either hot or chilled. They are soft but still firm and well shaped. As you cut through them with a fork or spoon, the cassia-flavored sauce flows out to sweeten the fruit with an exotic perfume and a faintly salty aftertaste.

Ingredients

  • 4 large, firm Bartlett or Anjou pears

Method

Select pears that will sit up securely. Rinse them and cut off 1 inch from the tops, which will be used as lids. Core the pears with a fruit corer, making sure you don’t go through the bottoms.
