This soup features sorrel, or as it is sometimes called “sour leaf,” a hardy perennial that is found growing wild and in abundance all over the world. Sorrel’s sharp, almost lemony flavor is said to have a “cleansing effect” on the body, so it is no wonder that many Ukrainians serve this soup in the springtime, after a long, cold winter.
