This is another classic homestyle dish. Most Ukrainian cooks will choose a beef round steak to make bytky, although using a veal steak is not unheard of. Recipes vary only slightly from family to family—usually in embellishments. Adding bits of sweet bell pepper, mushrooms, or fresh herbs makes bytky a versatile dish, especially when served with the staple buckwheat kasha.
