Fish babka is a traditional Jewish dish from Ukraine. It is a “fish pudding” of sorts, lightened with whipped egg whites, giving the final product a more soufflé-like texture—but it is much more stable than a soufflé and can be turned out and cut into wedges to serve. This makes a nice brunch dish served with a fresh green salad.

Ingredients

  • 1 pound whitefish fillets, skinned and cut into 1-inch cubes
  • 2 cups fresh white bread cubes

Method

Preheat the oven to 350°F. Butter a 6-inch by 9-inch rectangular baking dish. Put the fish cubes in a large bowl, add the bread cubes and pour the milk over top. Set aside to soak while you cook the onions.

Melt the butter in a small skillet over medium heat and add the onion.
