Wild Boar and Sausages with Sauerkraut

This specialty shows the kinship between Ukrainian fare and the foods of the Germanic and Northern Slavic peoples—sauerkraut is stewed with the likes of wild boar and sausages made of venison and wild boar. This is a great dish for a very special occasion and a hungry meat-eating crowd. Serve with plenty of boiled potatoes, pickled horseradish relish, a green vegetable or salad, and plenty of crusty bread or rolls.
