I think Yukon gold potatoes give this filling a superior flavor. Feel free to vary the proportions and seasonings to suit your taste.

Ingredients

  • 1 small onion, finely chopped
  • 1 tablespoon unsalted butter
  • 2½ cups c

Method

In a small skillet over medium heat, sauté the onion in the butter until soft, about 5 minutes. Let the mixture cool and then add to the mashed potatoes along with the salt and white pepper. Mix well. Chill and then use to fill varenyky .
