Definitely a North American invention from the Canadian prairies, grated cheddar cheese adds a wonderful flavor to a potato filling for varenyky. In the Hutsul region of Ukraine, bryndzia (an aged ewe’s milk cheese) would be substituted for the cheddar cheese.

Ingredients

  • 1 small onion, finely chopped
  • 1 tablespoon unsalted butter
  • cups c

Method

In a small skillet over medium heat, sauté the onion in the butter until soft, about 5 minutes. Let the onion cool slightly and then mix in the mashed potatoes. Stir in the grated cheese. Taste and add salt and black pepper if needed and mix well. Chill and then use to fill varenyky.
