The addition of a combination of chopped fresh herbs greatly enhances this filling.


  • 1 small onion, finely chopped
  • 1 tablespoon unsalted butter

In a small skillet over medium heat, sauté the onion in the butter until soft, about 5 minutes. Stir the onion into the chopped fish, along with the herbs, egg yolks, salt, and black pepper. Mix well. Chill and then use to fill varenyky.
