In Ukrainian cookery, a torte is usually a fancy cake often composed of anywhere from two to five layers, filled with a rich, satiny filling. If it is a “layered” torte, the end result is much more compact and flatter than the more contemporary versions baked in the United States, which are fluffier and lighter. Ukrainian tortes can use ground nuts or breadcrumbs in place of some of the flour which acts as a thickening agent and when combined with several eggs makes for a heavenly treat!
