Horikhivnyk is the specific name given to “nut bars” in Ukraine. But everyone seems to have their favorite recipe. I think of mine as a more contemporary version, but I will let readers be the judge. The thin and crumbly crust is made with both butter and lard, which is typically “old country” and nowadays I opt for turbinado sugar (see sidebar) rather than the usual white sugar because it gives the bars a deeper flavor and a signature crunchy
