The Banda Islands in eastern Indonesia are the original home of the nutmeg and three-quarters of the world’s supply are grown in Indonesia to this day. The tart yellow fruit is prized as much as, or perhaps more than, the seed in the cooking of the islands where they grow. Its spiced flesh is candied or made into jam. The lacy web of red mace that is layered between the fruit and seed is rarely used in local cooking, instead packed up for export or used in cosmetics.
