Opulent ingredients need only simple preparation. Here fine beef steak is marinated in saffron and its bitter-honeyed notes come through distinctly. The other spice at play is ground sumac berries, whose mouth-puckering, sour earthiness marries well with tomatoes.

Method

Soak the saffron in a tablespoon of hot water whilst you prepare the beef. Trim any excess fat from the steak and cut into 2.5 cm (1 inch) cubes.

Put the onion, garlic, salt, pepper and lime juice in a blender. Add the saffron with its soaking liquid and blitz to a paste. Scrape this marina
