Here we have a sweet yoghurt drink, the sort so romantic and ambrosial, it could inspire poetry.

Go gently with the spices and rose water, tasting as you add. We are after ethereal, not incense.

Ingredients

  • pinch of saffron, crumbled
  • 500 g (2 cups) Greek-style (strained) yoghurt

Method

Soak the saffron in a tablespoon of hot water and leave to cool and infuse to a buttercup yellow.
