Gunpowder is an explosive chilli spice blend from South India, also known as podi. Typically mixed with sesame oil or ghee and served alongside dosas or idli, it can add nutty oomph to just about anything. Try it sprinkled on lamb chops, stirred through buttery rice or shaken over finger chips. Here it coats green stars of okra, fried until tender-crisp.
