I make many different variations of this to add flavour to simple meals. Salsa verde translates literally as ‘green sauce’ from Spanish, and a Mexican version is made with tomatillos and coriander. You can chop and change this recipe, depending on what fresh herbs you have or like and what you’re serving it with. Some classic pairings are: a tarragon-heavy dressing for roast chicken, mint is great with lamb, and parsley always works well with white fish or vegetables.
