Most Nigerian dishes require you to pre-boil the chicken/ meat before you use it. I’d advise that when doing this, you add a small amount of water because the meat/chicken comes with their own natural liquids which seep out during cooking.
In addition, if you want to make a stock, include the relevant seasonings for the dish in question. If the protein is tough and requires cooking for more than 45 minutes, then you may need to add more water.
