Origin: The Nigerian fish stew is an appetizing union of spices and aromas. Whether you are using tilapia, croaker, or catfish, the taste is in the cooking. This is our favourite fish stew recipe from Orishirishi kitchen using catfish.

Ingredients

  • 1 whole catfish (or preferred fish)
  • 4 (or 400 g / 14 oz)

Method

  1. Pour vegetable oil into pan, add chopped ½ onion and fry for 3 minutes.
  2. Pour tomato mix into oil and fry for 15 minutes.
  3. Add 500 ml / 17 fl oz of water and stock cubes. Boil for 20 minutes.
  4. Add fish and cook on low heat for at least 30 minutes.
