Inspired by the likes of my husband, a Lagosian through and through, frejon is an ode to Nigeria’s most bustling city.

Origin: Frejon is the Portuguese word for beans, and this meal consists of beans cooked and pureed in coconut milk. It is native to Brazil but has since found its way into Nigeria and West Africa following the abolition of slave trade. Today, it is most popular in the city of Lagos, often served during Easter.
