Gizdodo is an increasingly popular Nigerian favourite. Prepared with fried plantain and chunks of gizzard lightly fried in spicy tomato sauce, it is a perfect companion for any rice dish.

Ingredients

  • 3 whole plantains
  • 500 g / 18 oz gizzard
  • 4

Method

  1. Pour 50 ml / 1.7 fl oz vegetable oil in frying pan and heat up for 1 minute.
  2. Add sliced onion and sliced tomatoes, and stir gently for 2 minutes.
  3. Add mixed tomato paste and stir-fry for 2 minutes.
  4. Add boiled gizzard, stock cube, blended pepper, garlic powder (optional), and a pinch of salt to taste. Lower heat and leave to cook for 10 minutes.<
