Snails are rich in nutrients, containing protein, iron, and vitamins E, A, K and B12. There are many ways to cook snails, but one of the very best is to fry in spicy pepper sauce, thereby complementing the snail’s texture with a rich mix of flavours.

Ingredients

  • 6 jumbo snails
  • 6 ata rodo (Scotch bonnet) peppers
  • 40 g / 1.4

Method

  1. Pour 1 tbsp of vegetable oil into frying pan and heat for 1 minute.
  2. Add diced onions and stir for another 1 minute.
  3. Add snails into pan and stir-fry for 3 minutes.
  4. Add stock cubes, blended pepper, and mixed tomato paste into frying pan and stir-fry for 5 minutes.
  5. Add sliced tomatoes and let simmer for 5 minutes.
