A very old style of drink, flips call for a whole egg (sometimes just the yolk), creating a hearty, fortifying mixture that tastes much better than it sounds. Any of the dry sherries–fino, manzanilla, amontillado–work here.
Combine the sherry, simple syrup, and egg in a shaker. Add ice, shake hard for 8–10 seconds, and strain into a chilled cocktail glass, wineglass, or coupe. Sprinkle with the nutmeg.
