This recipe is from the 1887 edition of Jerry Thomas’s The Bar-Tenders Guide and is basically an Old Fashioned in a cocktail glass instead of on the rocks. And no, there is nothing Japanese about the drink other than the name.

Ingredients

  • 2 fl oz (60 ml) Cognac
  • ½ fl oz (15 ml

Method

Combine the Cognac, orgeat syrup, and bitters in a mixing glass filled with ice and stir until well chilled, 20–30 seconds. Strain into a chilled coupe or cocktail glass. Express the lemon zest over the drink and drop it into the glass.
